For the dough:
- 3 Tbsp flour
- 3 Tbsp oat fiber
- 1 tsp erythratol (or sweetener of choice)
- 1/2 tsp yeast
- 1/4 tsp baking powder
- pinch of salt
- 1/4 cup water
- Mix all the dry ingredients together, then add the water.
- Knead with the back of a spoon until all the dry ingredients are incorporated and the mixture comes together as a dough.
- Allow the dough to rest for 5-10 minutes while the yeast softens and flour and oat fiber hydrate.
- Knead again with the back a spoon, this time until the dough becomes smooth and uniform.
- Wet your hands and roll the dough between your hands to form a "sausage". Place down onto piece of plastic wrap or parchment paper and flatten it out, continuing to shape it into a long, narrow rectangle. Set aside while you work on the cinnamon layer.
For the cinnamon swirl:
- 1/4 tsp cinnamon
- 1/2 tsp coconut flour
- 1 tsp erythratol
- 1 tsp water
- Mix all the ingredients together to form a paste.
- Spread a thin later of the paste over the dough.
- Roll up. Flatten slightly. Place on a piece of parchment baking paper.
- Bake at 350 for 30 minutes.
- Allow to cool before enjoying.
