47 calorie sugar cookie

This sugar cookie recipe is for lazy people and people who aren't so into cooking. I start with sugar cookie baking mix, which gives this recipe the proper sugar cookie taste, but then omit the eggs and butter (too many calories), and instead add oat fiber (for bulk) and water (for cohesion).



Ingredients:


  • 1 tablespoon betty crocker sugar cookie mix
  • 1 tablespoon lifesource oat fiber
  • 1 tablespoon water
  • parchment paper


Combine all the ingredients and mix until the dough forms a ball. Dump out onto a piece of parchment paper and flatten into a cookie shape using wet hands. Bake at 375 for 9-12 minutes.

This makes a soft sugar cookie more than it does a crispy or flaky one. If you prefer a crunchier cookie, shape the dough thinner, bake on the bottom rack, and bake for a longer time (12-15 minutes).

If you don't find the cookies sweet enough you can add extra sweetener to the dough (ie. like a teaspoon of splenda), and if you don't find they have a strong enough cookie flavor you can also try adding vanilla or butter flavoring to the dough. Personally though even though the sugar cookie taste is diluted with the oat fiber and the final cookie is only mildly sweet, it's still close enough to a real cookie to be enjoyable.

You can also decorate the cookies with sprinkles or erythritol before they go into the oven, or make a frosting glaze from swerve (erythritol) to apply afterwards.

Note: according to most food databases 1 tbsp of betty crocker sugar cookie mix is 9g and 37 calories. However, I was unable to get an 9g tablespoon, and mine were all about 12g and 47 calories.
