99 Calorie Cinnamon Bun

For the dough:

  • 3 Tbsp flour
  • 3 Tbsp oat fiber
  • 1 tsp erythratol (or sweetener of choice)
  • 1/2 tsp yeast
  • 1/4 tsp baking powder
  • pinch of salt
  • 1/4 cup water
  1. Mix all the dry ingredients together, then add the water. 
  2. Knead with the back of a spoon until all the dry ingredients are incorporated and the mixture comes together as a dough. 
  3. Allow the dough to rest for 5-10 minutes while the yeast softens and flour and oat fiber hydrate. 
  4. Knead again with the back a spoon, this time until the dough becomes smooth and uniform. 
  5. Wet your hands and roll the dough between your hands to form a "sausage". Place down onto piece of plastic wrap or parchment paper and flatten it out, continuing to shape it into a long, narrow rectangle. Set aside while you work on the cinnamon layer. 
For the cinnamon swirl:
  • 1/4 tsp cinnamon
  • 1/2 tsp coconut flour
  • 1 tsp erythratol
  • 1 tsp water
  1. Mix all the ingredients together to form a paste. 
  2. Spread a thin later of the paste over the dough.
  3. Roll up. Flatten slightly. Place on a piece of parchment baking paper. 
  4. Bake at 350 for 30 minutes. 
  5. Allow to cool before enjoying.
